Quick and Easy Avocado Egg Toast 4 ways: fried, stirred, boiled and poached. It's a simple and healthy breakfast, snack or light meal, packed with protein! Easy to make, tasty and satisfying. If you haven't had egg and avocado toast for breakfast yet, now is the time!

What I love about this recipe is that it's ahealthy, protein-packed breakfast ready in less than 10 minutes. I love that it's a complete meal made with good carbs (whole grain bread), great protein (eggs) and healthy fats (avocado!).
In this post, I'm going to show you how I make my avocado egg toast so you never have to spend $14 buying it at a restaurant. And I will show my technique tofried eggs, scrambled eggs, boiled eggs and poached eggsto complete your avocado toast!

Ingredients
- Avocado:Avocados are packed with healthy fats, vitamins, minerals and antioxidants and are a great addition to a well-balanced diet.
- Pan:You can use any bread you like for these recipes. I like to use whole grains for more goodness.
- Spices:Salt and pepper are added to taste.
- Additions:Depending on how you choose to cook your eggs, you may need a little butter for flavor or a little vinegar for scorching the eggs.

How to make Avocado Toast with Eggs
The first step is to toast the bread and mash the avocados. You can mash it in a bowl with salt and pepper, but I prefer to limit the cleaning and justsmash it directly into toasted bread. Make sure the bread is strong enough to support the mash.

Fried eggs
The first method is fried eggs. This is the best method I've found for frying eggs that produces perfectly cooked whites with lightly cooked yolks. Heat a little butter (or olive oil). Crack an egg into the skillet and reduce the heat to low.Cook uncovered until the whites are set.You can cover it once the whites are set if you want a firmer yolk.

Scrambled eggs
Start with butter (or olive oil) and heat until melted. Beat the eggs in a small bowl and pour them into the center of a nonstick skillet. The egg mixture will spread out and you should watch the edges and wait for them to set. then softlyfold the eggs from one side of the pan to the other without breaking the eggs. You will get soft and fluffy eggs without milk.

boiled eggs
Cover the eggs with water in a small saucepan. Bring the water to a boil and thenreduce heat to low and cook to desired doneness(see suggested times in the recipe card below). Transfer them to an ice bath immediately after cooking before peeling.

poached eggs
Bring a small pot of water to a boil. Add the vinegar and create a vortex with the boiling water. Lower the heat so that the water boils at the bottom of the pan. When you see it boiling, crack an egg into a small bowl. Carefully slide the egg into the center of the pan and cook to the desired doneness.

Tips for making this recipe.
- Choose ripe avocados.It all comes down to avocados. Try to find an avocado that is ripe, but not overripe. You'll know it's ripe if you gently squeeze the avocado with your palm and it gives a little. Do not use your fingertips as this could injure you.
- Use thick slices of bread and toast.It's best to buy good bread that is strong enough to contain the avocado and eggs and other ingredients you'd like to add. Use something that provides a solid foundation, like thick bread and multigrains.
- Mash the avocado with supplements for more flavor.You can add lemon or lime juice with salt and pepper. You can also add fresh herbs like cilantro, parsley or basil and spices like crushed red pepper, cumin or paprika. it's almost like avery simple guacamoleready to be spread on toast.
- Enjoy your avocado toast as soon as you make it.Avocados can brown quickly once opened, so it's best to use them right away.

What's the best bread to use for breakfast with avocado toast?
Of course, you can use any bread you like, although I recommend using whole grains. Whole wheat bread is an excellent source of protein, fiber, healthy fats, vitamins and minerals, making it a better choice than white sandwich bread. Use a gluten-free bread if you have an intolerance.
Is it healthy to eat an avocado a day?
Avocado is a great source of vitamins C, E, K and B6, as well as being rich in folic acid, magnesium and potassium. They contain fat, but they are healthy fats that are great to include in your diet. If you're watching your weight, it's recommended to limit yourself to half an avocado a day.

Fried eggs
- ½ soup spoon butter
- 1 big eggs
Scrambled eggs
- ½ soup spoon butter
- 2 eggs
boiled eggs
- 2 eggs

- 2 teaspoons white vinegar
- 1 big eggs
Instructions
Toast the bread in the toaster until golden and crispy, place the avocado on the toast, cut into slices and flatten over the toast. Top with the eggs of your choice and season with salt and pepper to taste.
For fried eggs:Heat the butter in a nonstick skillet over medium-high heat until very hot. Crack the egg into the skillet and immediately reduce the heat to low. Cook uncovered until the whites are completely set and the yolks are thickened to your liking, about 5 to 7 minutes.
For scrambled eggs:Heat the butter in a nonstick skillet over medium-high heat until very hot. Whisk the eggs in a small bowl and carefully pour into the center of the pan. When the edges begin to set, begin to gently fold in the eggs until just cooked through, about 2 to 3 minutes.
For boiled eggs:Put the eggs in a pan. Pour cold water over the eggs until they are completely submerged. Bring water to a boil, reduce heat to low, and cook to desired doneness: 4 minutes DELICATE cooking; 6 minutes to HALF boil; 12 minutes to boil. Prepare a container with ice water. Transfer hard-boiled eggs to ice water to cool completely before peeling.
For the poached eggs:Bring a large pot of water to a boil. Crack an egg into a small bowl. Stir the vinegar into the water and create a vortex with the boiling water. Lower the heat so that the water boils at the bottom of the pan. Then carefully add the egg to the center of the pan and cook for 3-4 minutes, depending on desired doneness. Remove the egg with a slotted spoon.

Store:For best results, eat avocado toast immediately after making it. To store unused avocados, place them in an airtight container or plastic bag with a little lemon or lime juice in the fridge for up to 24 hours.
Serving size:One serving is a fried egg with ¼ avocado and a slice of bread.
